Essential Functions: Picks, packs, verifies and processes customer orders to be shipped via local couriers or commercial carriers using various software suites. Notifies Customer Care and Key Accounts personnel of incomplete/inaccurate customer addresses.
li>Ensures safe and sanitary kitchen and storage areas are maintained by checking food products for temperature and freshness, rotating food items as needed, maintaining correct cooling, reheating and storing of foods, cleaning and wiping counters, shelves, refrigerators, hot and cold wells and surrounding areas, organizing storage area as needed, storing and restocking product on the line and surrounding areas, and following proper utilization guidelines for all supplies and equipment. Assists the Chef by participating in the training of production cooks and catering staff, providing guidance on proper portion controls and food presentation, monitoring cooks' performance, communicating relevant information between shifts, monitoring team member performance, training team members, conducting performance appraisals, providing counseling, guidance, and corrective action as needed, generating appropriate paperwork, and reporting discrepancies to the Chef.
p>Job Purpose: Supervises and oversees Resort Food and Beverage operations and staff, enforces food safety practices, cleanliness, and ensures an exceptional guest dining experience. Today the Sycuan Tribe governs its Reservation, owns and operates a Casino and a Golf Resort, and owns a number of other business ventures in the San Diego Region.
Provides accounting of transactions during shift by entering cash transactions in to point of sale system, counting currency, logging guest discounts, VIP points and credit cards on to cashier drop work sheet, balancing money drawer against generated cashier report following established procedures, and reporting discrepancies to the food services management team. Ensures responsible alcohol beverage service policies are followed by asking for proper identification from guests that appear to be under the age of 30, monitoring alcohol consumption, ensuring guests do not become intoxicated following established procedures, stopping alcohol service at the designated time, and clearing the room of all alcoholic containers, glasses and bottles for each venue at the time specified.
Provides kitchen with adequate supply of clean pots, pans, utensils, and dishware by scraping, racking, stacking, and washing; unloading dishwasher; manually washing items as needed; and putting items away when dry to the appropriate area. Ensures kitchen safety by organizing soiled pots, pans, and dishes prior to loading them into the dishwasher; mopping and cleaning spills; and placing caution signs on wet floors and in hazardous areas according to established procedures.
