Musashi Japanese Fusion is seeking a skilled, dependable, and experienced Sushi Chef to join our team. This is not an entry-level position. Applicants must have at least two years of professional experience working as a sushi chef in a high-volume restaurant.

The ideal candidate has strong knife skills, understands proper fish handling, and can consistently prepare high-quality sushi with excellent presentation. We are looking for someone who is reliable, works efficiently under pressure, and takes pride in every plate served.

Key Responsibilities:

• Prepare sushi, sashimi, nigiri, rolls, and other Japanese menu items according to Musashi s standards
  
• Properly break down, fillet, portion, and store fresh fish
  
• Prepare sushi rice with consistent texture, seasoning, and temperature
  
• Maintain excellent quality, portion control, presentation, and consistency
  
• Inspect seafood and ingredients for freshness and quality
  
• Set up, stock, clean, and organize the sushi station before and after each shift
  
• Complete daily preparation, including sauces, garnishes, vegetables, and seafood
  
• Work quickly and accurately during busy lunch and dinner service
  
• Communicate with servers, kitchen staff, and other sushi chefs to ensure timely service
  
• Follow all food-safety, sanitation, labeling, temperature-control, and FIFO procedures
  
• Minimize food waste and properly manage product usage
  
• Assist with inventory counts and notify management of low-stock or quality concerns
  
• Provide a professional and welcoming experience for guests seated at the sushi bar
  
• Help train and support other sushi team members when needed
  

Required Qualifications:

• Minimum of two years of professional sushi chef experience
  
• Strong sushi, sashimi, nigiri, and roll-making skills
  
• Professional knife skills and knowledge of proper seafood handling
  
• Fish-filleting and breakdown experience strongly preferred
  
• Knowledge of sushi rice preparation, food safety, and proper storage
  
• Ability to follow recipes and maintain consistent quality and presentation
  
• Must have reliable transportation and a dependable vehicle
  
• Must be punctual, responsible, and able to maintain a consistent work schedule
  
• Ability to work evenings, weekends, and holidays as required
  
• Ability to stand for extended periods and lift up to 50 pounds
  
• Food Handler Certification required or must be obtained upon hiring
