The Food Production Managerfocuses on the day-to-day food production side of the kitchen for AL, CMC, MDR, LVT and Bistro; oversees meal prep and cooking for residents; ensures food is prepared on time and in correct portions according to established numbers; follows therapeutic diet guidelines (pureed, mechanical, gluten free, etc.); supervises cooks and diet aides during shifts; checks food quality, temperature and safety compliance; coordinates tray line service making sure residents get correct meals; strong large-scale cooking experience (batch cooking); catering events; knowledge of healthcare diets and restrictions; leadership ability (managing shifts, training staff); food safety certification (Serv Safe) culinary certification preferred; ability to follow strict schedules and regulations (State and Health Department); menu development, prep sheets, pull lists; oversees stock/ordering – par sheets and ordering guides, oversees equipment.
