THE TEAM

As Pastry Sous Chef, you will be an integral member of the Kitchen team, reporting to the Pastry Chef and supporting the daily leadership of the pastry operation. You will supervise pastry cooks and work closely with Culinary, Food & Beverage, Purchasing, Stewarding, Engineering, and Catering teams to ensure the consistent delivery of exceptional pastry offerings across restaurant outlets, banquet functions, amenities, and custom cake orders.

YOUR ROLE

The Pastry Sous Chef plays a key role in ensuring the successful day-to-day operation of the pastry kitchen. You will lead and support the pastry team in producing high-quality desserts, baked goods, amenities, and specialty items while maintaining the highest standards of food quality, presentation, sanitation, safety, and efficiency. Through strong leadership, organization, and collaboration, you will contribute to memorable guest experiences and the overall success of the culinary operation.

HOW YOU'LL MAKE THE PLACE

  • Lead and supervise the daily operations of the pastry kitchen, ensuring consistent quality, presentation, and execution of all pastry and dessert offerings.
  • Plan, assign, and oversee production and preparation activities for restaurant menus, banquet events, amenities, and custom cake orders.
  • Review business forecasts, event requirements, and operational needs to ensure appropriate staffing, production levels, and inventory availability.
  • Maintain exceptional standards of cleanliness, food safety, storage, and sanitation throughout all pastry work areas and equipment.
  • Support the ordering, receiving, and storage of ingredients and supplies while minimizing waste and maximizing product utilization.
  • Coach, train, and develop pastry team members, fostering a collaborative, motivated, and high-performing work environment.
  • Monitor team performance and ensure compliance with departmental standards, policies, and procedures.
  • Work alongside the team during service periods, proactively addressing operational challenges and ensuring seamless delivery of pastry products.

COULD THIS BE YOU?

  • You have experience in a luxury hotel, fine dining restaurant, or similarly high-volume culinary environment.
  • You possess strong pastry production knowledge and a passion for delivering exceptional quality and presentation.
  • You can effectively prioritize, organize, and delegate workloads while maintaining attention to detail and a sense of urgency.
  • You are comfortable leading, motivating, and developing team members while fostering a positive and collaborative culture.
  • You have a strong understanding of food safety, sanitation standards, inventory management, and kitchen operations.
  • You are confident creating, adapting, and scaling recipes to meet varying production and business demands.
  • You communicate clearly and work effectively with colleagues across multiple departments and service teams.
  • You hold a food handler certification; a culinary degree or formal culinary training is an advantage.
