THE JOB:

Join the culinary team at Mandalay Bay as an Pastry Sous Chef, where you'll help create exceptional desserts, pastries, and baked goods in a fast-paced luxury resort environment. This role is ideal for a creative, detail-oriented pastry professional with strong baking skills, a passion for quality, and the ability to thrive as part of a collaborative kitchen team.

THE DAY-TO-DAY:

  • Ensure requisitions are processed properly and placed in designated area

  • Restock kitchen supplies and food items required for service

  • Label and date products to ensure safekeeping and sanitation

  • Maintain production knowledge and attention to detail with decoration and taste quality

  • Assist Pastry Chef, other Assistant Pastry Chefs, bakers, and helpers as needed in execution of production

  • Conduct training for bakers and helpers on job responsibilities

  • Communicate with management and service staff in order to fulfill and address any issues or needs requested by guests and employees

  • Assist Executive Chef and Pastry Chef by controlling food and labor cost, and establish goals and objectives that focus on profit, product and people

  • Assist Executive Chef and Pastry Chef by controlling of purchasing, receiving, purveyor lists and inventory of all kitchen items

THE IDEAL CANDIDATE:

  • High School Diploma or GED

  • 2+ years of prior relevant experience working with Pastries

  • 3+ years of prior relevant experience working in a similar resort setting with formal culinary training

  • Work varied shifts, to include weekends and holidays
